7 cups of mixed greens
1 cup each of sliced cucumber, radishes and mushrooms
fresh blooms from violets, marigolds and dandelions
grape tomatoes
1 tbs champagne vinegar
1 tsp Dijon mustard
1 tbs olive oil
Gently toss together the greens, mushrooms and tomatoes. In a small bowl whisk together the vinegar, mustard and olive oil. Toss through the greens mixture to coat. Chill and just before serving toss the fresh blooms through the salad. Substitute or add any other fresh vegetable of your choice.
